I am a wife and I have been a wife for almost 12 yrs (anniversary is next week). As much as I like a certain restaurant if it were my 10th wedding anniversary I would like a nice meal and therefore would use 2 TS credits at the Yachtsman's or Narcoossee's. I'm sure you will take future trips to WDW and you can eat at WCC then. The other suggestion is that you get the wings as a snack at some point during your trip to give her her "fix".
DH and I were at WDW for his 40th and I made reservations for Narcoossee's. It was a good choice because he said that was the best meal he's had in a long time and will remember it for the rest of his life. Wishes wasn't going on that night so we didn't see it, but I've heard from lots of people that it's a great place to view Wishes from.
