Do you do Christmas Roasts?

Doing ham/turkey this year. Used to do a rib roast in the past, but the always seem so greasy and house smells like beef fat for the next few days so we prefer healthier options now.
 
It depends on the year. This year, we have a trio of meats...two of which are already done. DH smoked a brisket the other night, so we have a ton of beef. We have a small ham that we're pretty much going to put out and pick at the slices. I was against it, but DH really wants to make a turkey, so we'll also be roasting a turkey. At least I stock up on them when prices are super cheap before Thanksgiving.
 
I also don’t want to spend Christmas in the kitchen so we either do lasagna that I can make in advance or a variety of apps and snack all day.
App variety is our other frequent Christmas option. I'd LOVE a big prime rib, but there are 5 of us, one doesn't eat beef, one only eats small amounts, and I had bariatric surgery so don't ever eat much. That leaves DH and the resident 8 year old to eat the majority of any roast. Seems like a lot of money, that would turn into a lot of waste, so I wait for prime rib until DH and I go out to dinner, and then we split a meal. It's not the same, but it's also not as wasteful.
 
We pretty much only do turkey on Thanksgiving. Christmas can be almost anything but the most "showy" thing I do is a crown roast of pork, which serves a crowd, is easy to cook and carve and works really well with the traditional sides like stuffing, mashed potatoes and gravy and all the hot veggies. We've been invited out this year and the hostess isn't doing turkey either, so we're excited to see what will be on offer. :santa:

A "Christmas roast" sounds like it could be part of Festivus, it could precede the airing of grievances?

@leebee, no need to peel red potatoes. Cube and boil them and the skins look fancy in the mashed potatoes. lol

We had prime rib and we'll have leftovers of it tonight.
Can't do that with the taters, ADHD/textural issues in the family.

I get it. Luckily, no one in my family cares. I've trained them to my shortcuts.

The prime rib was delicious and my Dad was impressed. He's never had "homemade" prime rib before. My Mom didn't care for red meat much, so she didn't make it often.
 
We do Surf and Turf for Christmas, usually crab legs and this year I added seared scallops. We started this decades ago because we didn't want turkey again:)
 
Beef tenderloin on Christmas Eve (for our big Christmas Eve party every year-so good but very expensive), roast chicken on Christmas Day just for my family (we’re not turkey fans) and we do prime rib on New Year’s Eve (people usually come over for a small NYE party).
 
We mix it up. In the last 5 years, we've had sushi, 2 prime rib roasts, a tenderloin roast, and this year, Dungeness crab.
