Do you do anything different or make additions to 'traditional' thanksgiving dishes?

in our home 'traditional' pumpkin pie tastes 'flat' to us because we've always doubled the spices (not the sugar) in the recipie.

with green bean casserole we use the traditional recipie but i add some canned mushrooms, sauteed onion, and some sliced (canned) water chestnuts. the water chestnuts don't change the taste but they add a nice crunch.

if we use stove top stuffing i make it according to the recipie but then i toss it with craisins and some chopped pecans-then i put it in the oven to crisp the top.

any special changes you enjoy making to 'traditional' recipies?

We use frozen greenbeans in the casserole since the canned ones are too mushy!

For the greenbean dish we use Golden Mushroom soup instead of Cream of Mushroom and golden & green beans.

I don't make pumpkin pie, I make pumpkin pie cake.

My sil is a pasty chef and this is what she brought to our family when she married in.
Her family has always had this since she was a child and now we have added it to our table.

Instead of a regular pumpkin pie, I make a pumpkin pie crunch. Here's the reicpe. I like it better than traditional pie.

1 can (16 ounces) solid pack pumpkin
1 can (12 ounces) evaporated milk
3 eggs
1-1/2 cups sugar
4 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 package DUNCAN HINES® Moist Deluxe® Classic Yellow Cake Mix
1 cup chopped pecans
1 cup butter or margarine, melted
Whipped topping

1. Preheat oven to 350°F. Grease bottom only of 13×9×2-inch baking pan.
2. Combine pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice and salt in large bowl. Pour into prepared pan. Sprinkle dry cake mix evenly over pumpkin mixture. Top with pecans. Drizzle with melted butter. Bake at 350°F for 50 to 55 minutes or until golden. Cool completely. Serve with whipped topping. Refrigerate leftovers.

***and I like the idea of putting water chesnuts in the green bean casserole. Sounds yummy. I just love those little things even though they don't taste like anything. LOL

My mom's family is Sicilian so along with the traditional Turkey we also have lasagna. We also have lasagna along with the main dish at Easter and Christmas. When my great grandma, who was born in Sicily, was alive it was true home made lasagna. Now grandma uses pre-made noodles and sauce but we still love it.

I make green bean cass with cream of celery soup.

Pumpkin pie is made with an almond flour crust and the filling is made low carb with splenda and using heavy whipping cream and water in place of the evaporated milk.

No stuffing, no gravy and no mashed potatoes.

I use fat-free evaporated milk in the pumpkin pies; it tastes exactly the same!

I love the flavour of oyster dressing, but I cannot stand the texture of oysters in my mouth, so I puree them before adding them to the dressing.

What I actually do is to fry loose italian sausage and oysters together, drain them, and mix them with my seasonings, melted butter and some turkey broth. Then I use a stick blender to make a fine slurry out of all that, which I then mix with my breadcrumbs.

I've "slipped" oysters to a lot of people this way, though of course I wouldn't ever do it to someone who was allergic. The version I use if we have an allergic guest contains sauteed oyster mushrooms instead of real oysters.

I also make fresh cranberry sauce -- in the microwave. It only takes about 5 minutes, and it is stunning on the table nested into a silver serving dish (with a glass liner, of course.)

I asked the family this morning, and they voted to have carrot souffle instead of sweet potatoes this year...they're both orange. We actually have baked sweet potatoes fairly often during the year. The kids don't really like the traditional "candied yams." So carrot souffle it is (tastes like cake!!!)

 My DD16 loves carrot souffle. She called "carrot dessert" when she was little. DD used to say she didn't like carrot souffle, but she LOVED carrot dessert. Now that she's 16 DD is in charge of making the carrot souffle, as well as devilled eggs, appetizers, and asparagus

Now that we're all on special diets I've had to change my menu a lot. No more sweet potatoe casserole. No green bean casserole, no full sugar jello salad, no corn on the cob. Now I make fat-free succotash, fresh fat free green beans, baked sweet potatoes. Almost everything is vegetarian, with the exception of the turkey and gravy. I learned how to make my stuffing in the crockpot. I make my own dry croutons for it out of 5 grain Italian bread and add celery, onions, and poultry seasoning.

Could you share this recipie??

Indian Pudding:

4 cups of milk
8 oz of molasses
2 tp butter
dash of salt
2/3 cup of corn meal
10 eggs
cap full of vanilla extract

mix all together then cook in a double boiler until it's very thick.

It's served warm with vanilla ice cream on top.

It's ok to cook ahead of time, and heat up in the microwave. Also tastes great as leftovers :)

I make the green bean casserole with frozen green beans and sauteed fresh mushrooms. I also make a homemade white sauce instead of using canned soup.

I do green bean casserole with fresh green beans instead of frozen or canned. I also use shredded cheese instead of milk and I always double the amount of french fried onions.
