Do we need a plan for IOA/Universal the 1st week of May?

Our first time to IOA and Universal will be early May. Do we need a plan like WDW, or can we just go and walk around and enjoy the rides? We have 3 kids (8, 11 & 12).

The only restaurant we really want to go to is Mythos.

Any advice to make our trip better, would be greatly appreciated We are staying off-site, so that is a done deal.

the first week of May during the week is usually pretty slow. it'll get more crowded by friday, and then the weekends are busy.

Any suggetion for the last week of May 27 to June 3. This will be our first visit to Universa.
