Do They Ever Add Additional Tastings and Mixologies?

I’ve been checking every other day or so, because we were in the last sign-up group and everything was booked, but is it pointless?
 
Not pointless! Spots opened up shortly before our cruise for most of the tastings and mixology classes, and there were additional events to book onboard that didn't have pre-sign ups.
 
There are usually additional spots held for booking onboard. Go to the sign up location listed in the Navigator you receive when you check in at the terminal.
 
On our recent NYE cruise on the Wonder, they were several tastings listed in the Navigator on the first day that were never available online. You should have no trouble booking something onboard.
 

Just off Friday and not prebooking any drink classes, there were several additional Mixology and other drink sessions not listed in the on-board activities prior. We booked Mixology at CS when boarding while the next days navigator had even more listed available to be booked. Don't despair. The same was seen for the popular meet n greets they opened up prior online...there was line up at the port excursions desk for the meet n greets to be booked once on-board.
