Your statement is indeed correct and Yachtsman is fine but it is important to keep in mind that many restaurants on property including most of Disney Springs are not Disney operated and may or may not take Disney Gift Cards. It is important to confirm in advance so you're not surprised after your meal.

For example, Yak & Yeti in Animal Kingdom is not a Disney operated restaurant. They do take Magic Bands for dining plans but any other non-cash payment uses a separate payment system of their own that may not be set up to accept Disney Gift Cards as a form or payment.

Hmmm, we only use Disney gift cards for our meals at WDW and we ate at Yak and Yeti multiple times when we were there the end of October and they took our gift card.
