We are using DME as we depart WDW to MCO, but we are having someone pick us up upon arrival.

When we booked our reservations, we apparently set up DME, gave our flight number and everything like that, but never received any DME info, nor was anything mentioned on our hard copy reservation. We leave in a week!

I hate to waste time calling, and since we won't need luggage tags, is it something we can double check, and fix at the resort if we have to, or should I call?

Yes, it will be no problem to confirm at the resort. In general, you don't really need anything for the ride home that would come in the packet. You should receive information about your departure in your room the day before you are scheduled to check out. That packet will have your pick-up time and information about RAC.

WHEN YOU SAY SOMEONE IS PICKING YOU UP ON ARRIVAL you do mean bags too, right.

Less confusion and less of a chance of messing your Disney bound DME trip up if you wait until you get there to fix problems with your homebound DME trip. For one way DME usage, going home, you don't need to worry about any problems until after you get there.

Make your homebound DME reservation at least a day before check out although usually this will be done for you at the welcoming area at the start of your vacation. If you are not flying right out of MCO, then pick a flight, any flight, any airline leaving about 3 hours after you want to leave your resort.

Bring all your baggage to the bus when ready to leave the resort (15 minutes before your bus time).

If you already have a reservation, then no big deal. But, are you sure you have one?? You may not. But, that isn't going to be an issue. You can set it up when you get to your resort.
Just stop by the front desk and give them your return info. Then, the day before you are to leave, a notice will be left in your room, giving you your bus pickup time. This is the time the bus leaves, not the time you should arrive at the stop!! Be at the stop ready to go, about 15 mins before your appointed time.
If you are flying home on a participating airline, you will be able to check your bags right at the resort and get your boarding passes.
