diver and personalized menu at Coral Reef??

Can someone please tell me how you get the diver with a sign and the personalized menus at CR. We have an ADR there and I would love to do this but am not sure how or who to call. Also, if we don't get seated right near the aquarium will we be able to see a diver? Thanks
