I think you could do LL and Sea World each in a day. We just spent one day at each a couple of weekends ago and didn't do everything, but we live pretty close by and figured we could just return another time to do the things we missed so we were somewhat casual in our approach. It was our first visit to each, and we haven't made it to the SD Zoo or WAP yet. I personally love DL in December and would love to spend 4-5 days there. It can get crowded, and you'll be able to take it easy and do everything if you spend that much time.

For Sea World, here's my notes. (This stuff may be obvious if you've already started trolling the boards.)
1. You can get 20% off by showing a Southwest frequent flier card at the gate. I couldn't find my card and just printed off a copy at the hotel and that was good enough for the discount. I also brought a coupon just in case that I ended up giving away to someone behind me. Here's the coupon.

2. Be prepared for a lot of extra charges on top of admission. Animal feeding sessions (dolphins, seals, sea lions, rays) are all $6 each. The sky tower ride is $2. The other pay ride was closed, so I don't know how much that one was. Squirting people on the raft ride is $0.25. And so on.
3. We arrived early around 9:30 and the front part of the park was open. The sky tower was taking people up, though it was foggy in the morning so decided to wait until later to go up (and then we didn't get to it at all, but it wasn't a huge deal for us).
4. We lined up at the rope near the Dolphin encounter. Talking to a park worker, he suggested starting at the dolphins and otters and working clockwise around the park. Just like at DL, for some reason people usually go the other way. We headed straight for the dolphin exhibit at the rope drop. The line for the dolphin feeding was immediately long and the session filled up fast. By the time we were done, the session was closed. There were only 2 feeding sessions that day, and you could both feed and pet the dolphins if you paid your $6. Children under 3 were free.
5. During the shows the rest of the park was slightly emptier. The line for food after a show let out was super long. They were smoking ribs at multiple places. We ate at the Carribbean place, which was just okay. I thought there might have been more choices at the other bbq place (Shipwreck Reef). The menus at the park do not match the menus on the Sea World website. My husband and I split the full rack of ribs meal (comes with corn and a dinner roll) plus a side of fruit and we were full. The kids meals can come with either a side of fries or carrots and raisins.
6. At the Shamu show, the splash zone is well marked as the lower 16 rows. I didn't think people would get wet at the top rows of that zone, but they did! Wear ponchos if you sit there, especially if you're below row 10 or so.
