Disneyland for Christmas-Few Q's

We're headed to Disneyland next month, surprising the kids for Christmas. We went earlier this year (first time for the kids) and I've been many times throughout my life. I have just a few questions though pertaining to this trip.

Weather: I looked up the average temps for the week we are going (12/4-12/8) and the highs look like they are around 70 and it gets quite chilly at night. Does that sound about right? I can't decide if we need shorts or not. We're from cooler weather state (PNW) so 70's is generally considered "warm" for us, although I think we might be fine in long pants and short sleeves. My real concern is the evening. How heavy of jackets should we bring? I was thinking fleeces might be sufficient with hats and gloves.

Characters: 4yr old DD (will be 5 in January) LOVED getting autographs when we went in March, her autograph photo album is loved on daily. The kids don't know we are going but we talk about going back all the time and she has a list of characters she missed and wants to see. Is there any way to know when we can find those specific characters? (Tiana, Aurora, Jack Skellington, Fairy Godmother..to name a few). I plan on spending an afternoon with just her getting autographs since her brother isn't interested.

Any holiday "must-dos"?

Weather...I think Hydroguy has a sticky thread about historical weather? I personally just watch the forecast for Anaheim on my phone app, or with my weather underground app (you pick which weather station to follow).

Jack should be in NOS. Princesses at the fantasy Faire, outside the princess theatre, and then Anna & Elsa have a "fast-pass-like" system. Tiana is usually in NOS too. I've only ever seen the Fairy Godmother at Minnie's for breakfast, but she might wander too? Fairies are at Pixie Hollow.

We go in January, a sweatshirt is all we need in the evenings. I'd opt for a hooded one and skip the hat.
We live 25 miles south of Portland.

We have found Aurora in the Royal Hall along with two other princesses.
Tiana we have found at NOS in the middle walkway in front of the French Market.
Jack and Sally setup over by the HM FP machines.
Fairy Godmother in the Main Street Hub in front of the shops by Mr. Lincoln.
