Disney without visiting the parks

On our visit in April we'd like to look around a resort or two, and do Disney without the cost of visiting the parks endlessly. We will still be taking a day at MGM and MK though.

We've already decided to have meals at Boma (do we need PS's) and Beaches 'N' Cream. Are there any resort restaurants that you'd recommend ? I've also read about hiring bikes for 4 or 6 people, which seems interesting.

Can anybody recommend any other Disney experiences ?
 
I think I would make a PS for Boma, but maybe wait until in WDW when you might have a better idea of when you want to dine.

Surrey bikes are available at a few of the resorts - off the top of my head, we've had them at CBR and POR and Boardwalk. You can also rent 'ordinary' bikes at WL and ride the trail to Fort Wilderness.

Other non-park suggestions:

take out a boat or water mouse from the pontoon at WL
mini-golf
walking the trail from WL to FW
take a moonlit ride on the boat from POR to Downtown Disney - magical :)
watching the electrical water pageant from GF, Poly, WL, Contemp or FW (very short, but very sweet!)
strolling around the Boardwalk resort in the evening.......

I'm sure there are lots more!
 
If you want to catch the Epcot laser/firework show renting a pontoon boat from the Y+B can be a relatively economical way of doing it. They take 10 people, if your group isn't that large a number there are many people on this site that will share a cruise in order to make up the numbers, it's also a nice way to meet fellow DIS'ers
