Disney without the kids?

Our 2nd trip is coming up in 3 weeks. We are considering an inroom babysitting service for DS 8, 6 and 3 so my husband and I can do Disney sans kids one night. (As a side note, has anyone used a BBsitting service before and if so do you have any advice?) Which park should we go to alone? Since we don't have park hoppers and since my husband has to leave early on our Epcot day to get back to work the next day, our choices are MK and HS...or leave early and do something else?? What would YOU do if you had a night there without the little ones??
 
DH and I have done both MK and Epcot for date nights without the kids...we haven't done DHS yet.

My first choice is whichever park is open the latest.
 
Can you switch your park days around so you could do EPCOT on your date night - that would be my first choice - otherwise MK hands down! We never hired a babysitting service, but on our last trip, as we ate at Capt. Cook's at POLY, we saw a babysitter from Kid's Night Out sitting for three children and helping them with their dinners. She was AMAZING with the kids. I have heard very good things about them and would use their service if we ever needed it.
