I am definitely upgrading our tickets to park hoppers and waterparks.
My question is, if I call Disney and add them now using my Disney visa would that qualify for the 6 months interest free or not?

The offer is only good on packages. Do you have a Disney resort reservation package you are adding them to? Then I think it would qualify for the 6 months no interest. If not, I would just save your money til your trip and upgrade at the park.
