I had a short back-and-forth conversation with @disneystoreprez on Twitter a while back about this very topic. The best he could say at the end of December was "we are looking at options".
There used to be a store in the Rideau Centre too, but it closed down a few years ago. I am not surprised that both stores closed, considering the overall decline in the selection and quality of products they offered.
Someone who used to work at the Bayshore location told me that they were looking at putting one in the new addition that's planned for St-Laurent - but that's at least a few years off... and may or may not be true...
When the store closed, staff was advised a new East end location was slated to open in the Fall of 2010. Naturally, it never panned out - likely based on the poor market conditions over the last couple of years.
While one may come to fruition in the next couple of years, I think it safe to say it's a LONG shot. Afterall, if Toronto lost key stores to closure - and they did larger revenues than the Bayshore location, it does not look promising.
I was so sad to see the Bayshore store close... I used to go at least once a week and almost always wound up buying something. I did notice that the selection was really limited for the last year it was opened.
I would be happy if they even offered an online Canada store where we could buy without duty or crazy shipping fees.

Thanks for the update. i'm from Montreal and The Ottawa Disney Store used to call me whenever they had sales on their amazing snowglobes. I use to drive down once a month!!!!! I miss it so much. Next week, we are going to Syracuse NY (we bought tickets for the tour of Disney's Beauty and the Beast) and I found out they have a Disney Store at the mall in Syracuse! YAHOOOOO!

I'm heading to the carousel Centre next month to check out the Disney Store. I heard it was upgraded to the new "prototype" similar to the interactive ones in NYC. Would you mind getting back with your thoughts/comments?

I too was bummed out about the Ottawa store closing :O( There is one at the vaughn mills centre, it was redone "smaller" but now it has been redone again to be "bigger" I was surprised when I went to it in Sep 2010.
I was also pleasantly surprised when we happened upon a Disney store in the big mall in Hamilton! My s/o family is there and so when we went to visit in Feb this year I was THRILLED to find the store. Whoohoo! but it is a looooooooong drive from Ottawa. :O(

It turns out that its the "same old same old" Disney store that was always at the Carousel Mall. Its not an interactive one at all. I did buy loads of stuff but just so you know, its not one of those "new" ones!!! Too bad.

I am a HUGE Disney fan, been many times. Montreal doesn't and NEVER will have a Disney store due to the french so I use to go to Ottawa once a year to get great items VERY sad when Rideau closed and then devastated when Bayshore closed I was told they would re open however that doesn't look like the case Toronto is way to far to go for disney so haven't been lately I was very surprised on a recent NYC trip to find a outlet at Woodbury which was a great store The Flag store in NYC was a huge disappointment, I found the one back on 5th was better and more interactive.
So please keep updates on any more EASTERN stores.
