I spent the majority of my winter vacations at disneyworld when I was a child. I now have a 5 and 7 year old and we are thinking about going down for a couple of days during break. We would be there from December 25-28 which I know is the most crowded time of the entire year. My kids are not disney freaks and I know it's the most magical place in the world but would I be crazy to just do a day at animal kingdom? Would also probably do a day at sea world and lego land. I know magic kingdom is the best for their age but from what I've read we'll be lucky to go on 5 rides.
 
If that would make your family happy, I wouldn't worry about "missing" what everyone says you should do. My kids LOVE AK. I have never been that week in December, but hear it is crazy. Probably even AK is busy. I don't know how they deal with overload, but they will extend park hours a bit to help.
 
I've never been there at the holidays, but I know AK doesn't handle crowds well. The walkways are fairly narrow and there aren't very many headline attractions, so lines can swell fast. On medium crowd days, I head out of there by noon. Don't get me wrong - it's my favorite park! I just don't think it will solve a holiday crowd issues.
