The Disney Institute at WDW no longer exists. It's now the home of the newest DVC resort Saratoga Springs. They discontinued the classes the year I finally decided to take one wouldn't ya know.
She's about 4 years too late, but don't let that stop you! Visit during the Flower and Garden Festival at Epcot (which is going on now) and take the time to speak with the CM's. I am absolutely certain they will give her tons of hints, tips and answers to the questions she has. It's not a class, but it's the next best thing.
Epcot has a formal event called the Flower and Garden Show that results in a great many topiaries and other formal and informal gardens, flower displays, etc. Because of this, there are many opportunities to speak with the Cast Members who maintain them throughout the summer. Regardless of whether the F&G Event itself is 'going on', the resulting displays are tended by CMs and by volunteers who tend to be Master Gardeners.
Your wife could take some time to enjoy these beautiful displays and while she is doing so she could speak with the CM's as they work. I have done so on several occasions, to my own personal delight and the apparent enjoyment of the person I was speaking with. They are quite helpful with hints, tips, etc.
