we are planning a short stop at disneyland paris next July, and was looking at the hotel + tickets packages available .. it seems like they include tickets for day of arrival and until day of check out, and I dont think we will need all of that.. Is it possible to book more stay nights than admission ticket days? (for example 3 nights stay and 2 day of tickets). If so, how to figure out the cost coz I couldnt see this doable on the website .

Alternatively I found Kyriad hotel can be booked for accomodation only either directly or through lastminute.com, and while they provide free shuttle to the park (essential for us coz we will not rent a car), and buying 20th anniversary tickets , it seems like a good deal to us. But doing that I think we will be missing early entrance to the park, am I correct ?

yes you will miss early entrance to the park if you staying at the Kyriad and don't have either Fantasy or Dream annual passes as park entry tickets.

You can call Disney and ask them for a price for 3 nights and 2 days park admission - it might not be much cheaper (if at all) compared with the normal package you can book online (ie 3nights/4days).
 
Try Expedia for room-only bookings at on-site hotels - they usually have quite a good rate, and you also get Extra Magic Hours. I've found room-only quotes direct from Disney to be quite expensive (usually more expensive than with tickets included!)...
