For the most part you should be able to do so. I think there still may be a handfull of carts at the most that will do cash only (for some reason the funnel cake stand in the Amercan Adventure is one if I recall, but it has been a while since I have been, so maybe someone else will pipe in here!)

As the PP said with the exception of a hand full of carts that only take cash Gift Cards can be used to pay for everything from a bottle of water to the entire vacation.

Do Disney Gift Cards ever expire or lose value ?

I think it is a federal law that any gift card cannot expire.

There are no fees (so they don't lose value) and they do not expire. THey are great for budgeting a trip! I know people have bought several cards and combined them onto one at some point in time so they would not have to deal with a lot of $25 gift cards. Also, they are re-loadable (and can add onto) at the stores...just had to learn to do that the other day!

This year I paid on our trip with Disney gift cards, the best part is that the Grocery store I get them from offers "fuel perks" . Where you get .10 to .20cents off a gallon of gas for every $50 you spend in gift cards. Needless to say I had a good bit of "free gas". I also had purchased gift cards for spending money to help me budget and get the fuel perks.

Were you able to get 4X points for the fuel when you purchased your gift cards? I purchased mine at a Kroger, and they were offering 4X fuel points. I purchased $200 worth of gift cards and had 800 fuel points which added up to 80 cents off per gallon!
