Disney Gift Cards

I was planning to purchase $500 in Disney gift cards to use as our dining money. Just a planning idea for us. My questions is can we use them at all restaurants DTD. We have reservations at House of Blues & Olivia's and plan to eat at OKW counter service and Earls for lunch. Also, to use at Vero Beach during our stay. Help!!!

We also used Disney Gift Cards to pay for our dining but instead of using the GCs at the restaurants, we just charged the meal to our room and paid off our room balance with the gift cards. I didn't want to have to keep track of this card having this balance and that card having that balance...

Earl of Sandwich and TRex in DTD both let us charge to the room...
