It looks like I will want to make my Palo's reservations for our last night around 8:00 and skip Parrot Cay at what will probably be early seating. (Me and everyone else on the ship )

My question is I want more than anything to share Disney Dreams with my family on the last night. Can we go to the early show even though our dining is early seating? Then the kids can go off and have dinner with their new friends or room service or whatever they would like (they're old enough).

I know that there is a show during the afternoon, but I'm planning on some spa time then and family time on our day at sea. (4 day Wonder)

The matinee is typically at 3:15. It is not guaranteed, but they have had it on our last several 3-day trips. We always leave CC a bit early to see the matinee as we like having that last evening free.

We went to the matinee on our 4 night cruise in January and it was great! It wasn't crowded.... we got great seats and later when everyone else was at the show we were enjoying the ship!

Assuming that the afternoon show will draw people from both the early and late evening performances, I would say you should be fine switching to the other show. Enjoy!! :)
