Can you use Disney Dollars for street vendors or snacks in the park?

Yes, you can. It's been my experience (and I've read) that you can use Disney Dollars anywhere at WDW just like "regular" cash.

Yes, Disney dollars can be used on anything in the parks.

Thank you guys so much for your posts. I was thinking that this would help me budget better to see where we are spending wise vs. charging everything to your room and having a bigger surprise at the end. By the way, you can't use the hotel charging privileges at street vendors right?

You can use Disney Dollars at any Disney-owned venue, and even a few non-Disney venues. I'm pretty sure that the McDonalds at Downtown Disney accepts DD$, and some of the non-Disney stores on the West Side also accept them.
