inhabe the Disney dinning plan that has one table service can I pick and choose when and where I want to use my credits ?? I booked Cinderella’s table and it requires two

Yes, you'll have the number of TS dining credits for your stay when you check in ( i.e. - 5 nights = 5 credits ). You can use them at will at locations that accept the TS credit.
