Disney dining question

I'm planning a trip for my daughter and I next October. I initially booked for a 7 night - 8 day stay using the dining deluxe package. Then I thought about it... If I'm sacrificing staying at a more luxurious hotel for this dining plan, (which I plan to use to the FULLEST, including many two meal vouchers), why not add a couple of days to our vacation? However, I'd like to keep my meal plan at the 7 night mark. Do they let you do this? In other words can I stay the duration with just a base magic plan? The deluxe plan is ALOT of food and I'd like to spread it out a little!
 
I'm new to this, so a second opinion might be a good idea. But got the deluxe meal plan for our upcoming vacay and called and asked the same question and they said no - bummer! Makes sense though, they'd probably never be able to make a profit that way.
 
Dining plans are for everyone on your reservation for the duration of the stay. Your meal credits expire at midnight of the day you checkout.
 
You can just book another reservation for the next few days- room only- no park tickets (since you can just add them on to your first reservation for much cheaper) and no dining plan

However- your dining plan credits will expire at midnight the day you check out of your first reservation- so you cant use the credits for the extra days you added on
