I'm a super picky eat who also has food allergies and travels with a much more adventurous eater. For what it's worth, here's my take:
CS: You'll be fine at Pop; I do love BBQ and thought Flame Tree, while probably the best choice for me in AK, was average at best; Liberty Inn is standard burgers, if that is what you want, do it, but you can also get a nice sandwich at the Patisserie in France; I don't consider any pizza in FL to be pizza I'd order (depends on where you're from and what you're used to, but give my NY pizza) HS is not good for CS, but we do fine at Backlot Express (I usually end up getting chicken fingers there); BOG - the menu looks fairly picky eater friendly enough for me
TS: Did not like Woldfgang Puck, it tasted like typical defrosted chain restaurant food; but we both love Raglan Road - it has a large menu and we've like it all three times (granted Ms. Picky here got the steak all three times); 50s PT - standard comfort food; you should be safe (if you don't do veggies, ask for a substitution if you don't want the antics); Hollywood and Vine - haven't been have you viewed the menu; Tony's - neither of us would go there; as for the other two - there is an up and down side to buffets for picky eaters. The up is that there are more choices, the down is that at a T/S, you can substitute. I don't ask them to make me things that aren't on the menu, but I will ask for something without the sauce, and frequently ask for a different side. I don't eat rice and don't like most veggies.
Check out the entire menu at each restaurant - even the dishes you / he won't eat and the kids menu. See if there is a side dish that you would eat and simply as for the sub. I've never had an issue (granted, my ressie always shows "allergies") and I always tip a little better when I ask for something special.
