If I book a trip for November 2018, during the time when free dining is typically offered, can the promotion be applied to my current reservation? Should I book it with hopper passes since that's a requirement for the promotion? Should I wait to add the dining until the dates are released? Can I modify the reservation online or would I have to call?

If you only want to book if you can get free dining, you should wait until it's offered. If you're willing to go without it, then go ahead and book now so that you have the resort and dates that you want. The thing to keep in mind is that free dining is offered to fill rooms - if enough people are already booked, they may not offer it, or they may exclude resorts that don't need to fill rooms. Also, if you do book now, and free dining is offered for your dates, there are a limited number of rooms available with the discount and already having a reservation won't "hold" one of those rooms for you. I'm pretty sure you'd have to call to change your reservation to get free dining.
