KMH1 said:Well, I just rolled out over 200 peanut butter balls (chocolate dipping will have to wait until tomorrow) and Kevin put together tree #1 and added lights. We're finally getting our act together around here. Of course, he just went upstairs, and he asked if I was coming up "soon." I told him I had to get caught up!![]()

I am really excited about Legoland - DS is all about building stuff with his blocks!!!My main question about San Diego - what's the difference between the zoo and the animal park? I've read a bunch, but don't have a good picture of what to expect. Also, we are looking at staying in the Mission Bay (???) area - any recommendations of where or where not to stay? DL is all booked, but we still need to figure out the San Diego side of it. Thanks again!!!!

When my DS was about 4 we took him to a museum. In the museum there was a part where there was an African village and the women in the village were, of course , dressed as they would be if they were in Africa- just a skirt and no top. My DS looked at those "women" for the longest time then said.... "Man! They have big muscles!"![]()

KMH1 said:I don't call them buckeyes, because all the buckeyes I've eaten seem "dryer" than these peanut butter balls. Plus, when I dip them, I cover the whole thing in chocolate.
Here's my recipe:
1 cup peanut butter
2 sticks butter
3 oz cream cheese
1 lb powdered (confectionery) sugar
chocolate melting disks
Let the butter and cream cheese soften. Then blend the butter, cream cheese, and peanut butter together. Slowly add the powdered sugar.
Refrigerate for a few hours then roll into small balls. I place them on wax paper on a cookie sheet and put them in the freezer.
Microwave your chocolate disks very carefully...only about 20 seconds at a time. Don't overheat the chocolate or it won't set. Keep stirring after the 20 second intervals until the chocolate is melted.
Take 6-8 peanut butter balls out of the freezer at a time...dip them in chocolate using a dipping spoon, so the excess chocolate drips off. Place on wax paper and let set. Sometimes the chocolate cracks, due to the cold/warm combination. I just re dip those, so they're extra-chocolaty!
You might have to reheat your chocolate or melt more disks, if you run low.
The most important thing about this recipe, is these have to stay refrigerated due to the butter and cream cheese. They are delicious cold. When I serve them, I only bring a few out a time and I keep refilling the dish.
For some crazy reason, I made a double recipe yesterday, so I have over 200 of them! My sister and father-in-law will get their own tin, because they love them as much as me.![]()
Hope that all made sense!

Some drunk/high idiot just plowed through the intersection, across the sidewalk and through our fence into the yard - taking out the Victorian double lamp post. There were absolutely no skid marks. He didn't even try to stop. Couldn't even speak coherently when my boss (the atty.) went outside. Thank God the car stopped. It isn't 10 feet from our building.![]()
