I don't have a binder, but I get all my papers together in neat plastic envelopes.
On my computer right now I have files for my reservation info, our schedule (could fill it in later with dates/park hours), a list of the rides with FP/ height requirements, a very long packing checklist (I pack months before the trip), and I made color coded index cards with the menus for counter service restaurants in all the parks (nice to have in your backpack, so you can glance at what foods you might be in the mood for before deciding where to grab a quick meal). If you're interested in anything, I could send it to you.
There are also a few things you could make before you go. T-shirts (iron-on designs or mickey tie-dye), Epcot passports (I'm going to try this for our upcoming trip). Collect quarters/pennies in mini-M&Ms containers for pressed pennies. Pick up a few Disney toys or clothes that you find on clearance while waiting for your trip. We also like to watch the Disney planning DVDs every so often and catch the Travel Channel specials whenever they're on. Last year, we started a Disney Family Movie Night once a week leading up to our trip. My kids weren't too familiar with the movies, so we tried to watch everything we could think of that has an attraction in the parks. There's a thread with tons of ideas for themes with food and games. You could try to do this once a month or so.
I know it's hard to wait. We had our first trip last May. I was totally packed and going nuts by the end of January.

We're going again this May. I'm about the same (packed the clothes in Feb, just finished packing yesterday, have been updating the menus, etc.) It's not too bad because I know what to expect, know what I need/don't need, but I'm a little more anxious because the kids don't know we're going to Disney, so the surprise is making DH & I crazy with anticipation.
