You generally disembark the same time for any cruise out of PC, I'd look for something after noon just to be on the safe side. We have made it to MCO really early before but we weren't going to fly out that day (spent a night at the Hyatt before our early AM flight the next day) They want you off the ship by 9am and ask you are out of your stateroom by 8am so they can start the turnover.
As PP mentioned, the disembarkation time is the same for all cruises out of PC. The ship is usually cleared by customs and express walk off begins around 7:30am. Everyone is asked to be out of their staterooms by 8:00am and off the ship by 9:00am. DCL recommends a flight time out of MCO no earlier than 11:30am. Some people schedule flights earlier and are able to make it. I prefer to go with a flight time of 12:30 to 2:00, if possible. I would rather have some cushion and sit at MCO for a bit than to be stressed about making a flight at the end of my vacation. There have been times ships have been delayed in docking due to mechanical issues or fog, or there can be auto accidents causing traffic jams on the way to MCO. And in my experience, the TSA at MCO is the slowest and most disorganized out of any airport I've ever traveled out of.

DCL does have transfers from WDW resorts ($35 per person). Typically, the pick up window is between 10:45-1:30. You receive a notice in your resort room the night before telling you what time/where to check in for the bus. Buses from the resorts usually arrive after 12:ish, and there's usually not much time between checking in and boarding at that time. If you arrive at the terminal at 10:30 (when they open) your chances of waiting 1-1 1/2 hours before actually boarding are good.

You can book DCL transfers from WDW to PC for $35 per person (each way). They tend to begin pickups at WDW around 10:30am and start arriving at PC around 12:30. If you go that route, you won't wait around at the terminal much because they will be boarding by the time you arrive.
Many people prefer to get to the port earlier and use a rental car or private car service to get from WDW to PC. Boarding often begins by 11:30.
