Despite have been of 5 Disney cruises I still can't recall the disembark procedure and time for getting off the ship. I probably don't remember because it never mattered to me before. However, I was making reservations for a car service from the ship to MCO and was asked what time I wanted to be picked up. So what is the procedure and what time would we be getting off the ship? We have early seating for dinner if that matters.
 
Pre-Covid: main (early) seating gets early breakfast (about 7 or 7:15 am depending on the dining room you were in for dinner the night before). Passengers doing the express walk-off with their own luggage will already be lined up waiting for the port authorities to clear the ship for debarking. By the time you finish breakfast (~8 to 8:15 am), they have usually started letting passengers off. You may have to wait in one of the lounges until they call your luggage tag color (this can be port dependent, depending on how much space is available for the luggage to be displayed in the terminal for pickup; I think there is more space at PC than in Miami) or you may be able to join the queue to debark directly once you have had breakfast. They don’t want you to return to your room after breakfast, so you will take your hand luggage with you to the dining room. At PC, we are usually off the ship shortly after 9 am (we do main dining as well) and have collected luggage, transferred it to a waiting bus, and arrived at either MCO or our WDW hotel (we’ve done both from PC at one time or another) by 10 am.

The unknown here is whether things will be much the same post-Covid.
 
I agree with above. Pre COVID we were off by 10. I want to say it may have been a little earlier but I can't remember. If you're scheduling car service I'd probably give yourself plenty of time. Its better for you to have to wait a bit than them leave without you. That way if you get stuck in customs or anything along those lines you have some cushion.
 
You also have the option (or did pre-covid) of eating breakfast in Cabanas at the time of your choosing, and can then schedule your car for whatever time you think you will be ready
 

In Port Canaveral they are usually encouraging people to be off by 9am. As PP's have said, breakfast is assigned that morning or you can eat at Cabanas. If I recall, you are asked to vacate your stateroom by 8am. Some other ports may use a number or character system to call people off, but Port Canaveral allows you to leave whenever you are ready -- with early walk-off starting around 7-7:15-ish.
 
We are at Port Canaveral and have scheduled our car for 9am so that seems reasonable based on what I've read here.
 
With first breakfast, which we've always had in our assigned MDR, here's my three most rental car pickup times. We were off the ship, collected luggage, on the rental car shuttle, and in the car at these times:

2019: 8:18am
2018: 8:15am
2016: 8:28am

One thing to keep in mind is that you can get breakfast from Cabanas starting at 6:30am. You don't have to eat breakfast in the MDR on disembarkation day.
