Dis Pudding Club

I'm drooling at my desk.

I bought Oreos so I could try the Oreo frosting then realised I didn't have any sugar so didn't make anything again but off to tesco tonight so i'll restock.

However, I'm now about to disappoint you :( Although I'm sure it would have tasted lovely if it had worked...

Seeing as my desserts so far have been rather "indulgent", I thought I'd go for something a little on the lighter side (I know, how could I?!). So this was a recipe from Rosemary Conley's Diet and Fitness Magazine for a Plum Tatin.

So first of all I made it a bit too wet, and some major sogginess occurred :( But i also tried to be clever and before I put it in the oven, I drizzled some syrup over the filo before placing it in the oven. And it burned! I had no idea why I didn't think that'd happen...:rotfl:

And so all in all, it tasted DISGUSTING and went straight in the bin!:sad2:

However, if anybody is interested then here's the recipe...

6 dark plums, stoned
2 tbsps caster sugar,
4 sheets filo pastry
oil spray

1. preheat oven to 200C and preheat a non stick frying pan.
2. add the stoned plums and the sugar to the hot pan and cook over a low heat until the sugar starts to colour. remove the plums from the pan and place in the base of a silicon cake mould.
3. add 2 tbsps of water to the pan, taking care as steam will develop from the hot sugar. heat until the sugar is dissolved, then pour over the plums.
4. layer the filo sheets on top, spraying inbetween the layers with a little oil spray.
5. bake in the oven for 15-20 minutes until golden in colour. remove from the oven and allow to cool slightly before turning out onto a serving plate. Serve hot or cold with low-fat yoghurt.

Oh dear!! I think there's a lesson in there somewhere: desserts should NEVER be low-fat! ;)

But to be honest Beth you are to be commended on giving something like that and trying to put your own spin on it. Personally I am not so brave first time out and stick pretty rigidly to a recipe - once I am happy it has turned out OK I then start to tweak it a little :thumbsup2

As I was having a bit of a tidy up this afternoon I came across some recipe cards that we had received in a box of Hotel Chocolate when we were members of their Tasting Club.
Each of the recipe cards was related to a specific chocolate in that particuar box - and they were exceptionally good by the way - and were provided to give us inspiration to try them out ourselves.
So I thought what better thing to do than to share them with my new found Pudding Buddies.

How's that Cheesecake?! :worship: I love cheesecake. I started reading the recipe and the first ingredient: 500g white chocolate. THAT'S HALF A KILOGRAM!!! :scared1:

I think I might start with the Key Lime Pie. :)
 
im a home with a sick child so might knock up a key lime pie, if i can get to the supermarket..yum:love:
 
I am hoping to try at least one thing this weekend but I haven't decided what it is yet. And it will have to be Saturday as we are out on Saturday night, probably until the early hours.
Having said that I could possibly knock up and Eton Mess even if I have had a couple of small ones ;)

It was chocolate, toffe and caramel ice creams, with mini malteser balls, toffee and hot fudge sauce all topped with cream! :lovestruc:lovestruc

Oh that sounds like my type of pudding. Actually scrap that - I would have it as starter, main and dessert if I thought I would get away with it :goodvibes
 
The kids and I have just made some Oreo cupcakes, they were a bit of a throw together thing just to entertain while it's raining but they turned out nice....

I've still not quite managed to master the right amount of mix in the cases, it's a bit hit and miss :rotfl:

If anyone wants the recipe I can post it :)

Recipe....
200g self raising flour
200g butter
200g caster sugar
6 or 7 regular size oreos
2 eggs
2 tea spoons vanilla essence
25g cocoa powder
25ml milk

1. Cream together the butter and sugar, seive the flour and cocoa powder
2. mix together the flour, butter & sugar and cocoa powder until evenly mixed
3. slowly add the milk, eggs and vanilla essenceand whisk gently until smooth
4. break up the oreos and finally add them
5. mix them in to the mixture and then distribute the mix into cupcake cases ( this amount made me roughly 22 muffin sized cakes)

Bake on 190 degrees for approx 15-17 minutes or until a knife comes out clean when you poke them. :)

I didn't ice them as I thought the Oreos would be enough, but if I was going to ;) I would use a simple butter cream and smash some spare oreos in a bag and then sprinkle them on top of the butter cream .....hmm actually might have to try that later! ;)

:rotfl::rotfl: Yes I have noticed there's a bit of a theme! ;)

The cream has melted into the cakes so they are really nice and moist, I was worried about the biscuits being too hard but they have really softened up!
DD wolfed one down - I don't think it even touched the sides! :rotfl:
