Holy Macaroni!!

I just put together a spice rub and coated a boston butt (down, beano!) with it...gonna let it sit overnight and then cook real low all day tomorrow...BBQ pulled pork tomorrow!! This is my first attempt at pork...I have my fingers crossed but if it tastes as good as it smells right now...I think it is a winner!

Oh Betsy they're SO-O good! You will be forever hooked on it now! I just did one earlier this week - I think mine was a pork roast - is there a difference between the butt and a roast?? Anyway, I used the Dinosaur rub on it over night, then put it in the crockpot on low. After about 4 hours of cooking with just the rub I poured a beer around it & sorta basted it with the "broth" every so often so as to not wash the rub off. Come evening it will FALL APART!! I usually lift it up out of there however I can (combo large meat fork with a spatula) and put it into a large dish. It will shred up with a fork in about 3 minutes...then put some BBQ sauce on it....this time I did a combo of 1/2 Red Bull Chipotle and 1/2 Kraft Honey Hickory Smoke and I poured a little more of the "beer broth" in just to be sure to keep it moist. Can I just say :thumbsup2 :thumbsup2 :thumbsup2 !! Then I mixed up some sweet coleslaw to put on top of the sandwiches! Again, I must say :thumbsup2 :thumbsup2 :thumbsup2 This is like the easiest thing! Let us know how it turns out!!!

CamColt...:rotfl: I think we can work out the COD thing - let me know if you want anything else while we're stopping!! Do you think 10:00 is a good time to get picked up to leave for the port or is that too late? DH doesn't want to rush...

We went to a cookout this afternoon at one of DH's friends from his work. Didn't know a sole...but ate like a piglet!:rotfl: I am still stuffed.
 
Annie, a Boston butt is a ham that hasn't been cured. I like it better than ham really because I am especially fond of pork.
We have been under a severe weather warning since about 4:00 this afternoon. I talked to Betsy and she said Palm Bch County is included in that severe weather. I feel perfectly save here in my condo but I worry about my kids in their houses. I was raised in "tornado alley" Alabama and spend lots of time in my mother's storm cellar. There has been so much severe weather around the country the last few weeks. More today too.:scared1:
 
We were without power here for close to 7 hours today. Thank goodness it wasn't as hot as last weekend! So, we spent all day playing games together as a family. Heck, the power should go out more often around here. Clue, Balderdash, Buzzword... fun! :) Much better than everybody lost in their own electronic world...

I had to cook our entire dinner meal on the BBQ since the power was still out then. Steaks, potatoes and corn. Glad I got that new BBQ with all the bells and whistles.

Ok, back to our game now.

Interesting...I'd never heard of making pulled pork from a ham (but then again, I don't get out much).:goodvibes Does it have a different texture? I just love how it turns out from the pork roasts.

Hope you didn't have bad storms, just the rain you need. This crazy Jet Stream is what's causing all those tornados and is keeping us cool & wet. I am ready for it to move on that's for sure! I think it got up to about 68 or 70 for a couple hours yesterday...but that's so much cooler than we should be by now. Today it's supposed to get into the upper 70's and then tomorrow low-80's!! FINALLY!! :banana: :yay: I am concerned that this cold outdoor pool water is going to really turn DS off to the whole swim team thing. If he's cold he will be miserable! We need it to warm up and stay warm!!

Just finished applying some repair tape inside & out to the tiny little hole in the tent. It was smaller than we remembered it being which was good. Then we did the first coat of the seam sealer (DH inside, me outside). OH the scoff and the "WHAT?!" I got when I brought up the part of the instructions which said to clean the seams with alcohol first!!:rotfl: So, NO, that was not done. I keep telling him if it ever pours down rain when we're camping he will be glad we did this. It's not like it's HARD to do. It's just biting into his Wii time!:rotfl: I don't think I'll bother him about the 2nd coat - it will just be easier for me to go out & do it myself. :rolleyes1 I sprayed the entire rainfly with this can of water repellent. There was nothing left over to do a 2nd coat or to put any on the body of the tent tho. DH is insisting it's FINE just leave it be since we sprayed it last year too. Do I sound paranoid?!:lmao: I just hope that when the camping weekend finally gets here it's not raining the day we go...'cuz we will not be looking to go SET UP in the rain! We're way too slow at it!

It is VERY nice outside today for a change! Ahhh..upper 70's!!:banana: LOVE it!

Thanks, Annie! You are a doll! If you can easily pick up some Sam Adams (bottles, regular Sam) that would be great. But if its too much to lug, don't worry about it. This will actually work out well. Im sure we will be able to meet up at the hotel at some point so then you can get rid of before heading to the port and we can have it all packed how we need it to be. Has anyone heard anything lately? Does all alcohol and water still need to be in carry ons? We are going to have some sore shoulders! ;) We are getting picked up by FL Tours at 9:00. I like to be at the port ASAP, crazy I know!


Its warming up here too! Finally! Tomorrow we may be in the low 80s! :cool1:

DH and I had a nice night out last night, dinner, then drinks in a lounge where we watched the Celtics game and listened to a live band. This was a new place for us and I'm glad we tried it. We will definitely go back.
 
All right, all right, so I goofed on my explanation of a Boston butt. What I meant to say was a Boston butt is the same cut of meat as a ham, but when you cure and smoke THAT cut of meat, it becomes a ham. If not, it is just a pork roast shaped like a ham. I am not even sure I know what I am saying:confused3 :confused3 :confused:
 
Pulled pork came out came out really good...but it took FOREVER!! It was done and cool enough to handle at about 9:30pm..so I just packed it in some tupperware and we will have it today.

I had started it at 12 when I got home from church..next time I will start it before I leave so it will be ready at dinner time. I will also make a different rub..this one had too much cayenne pepper and paprika..SPICY!! I like sweet bbq..so I will have to adjust that. I trimmed off the outside with the spice and the inside was goood!!!

We are going to the pool today because it is breezy and low 80's here today..perfect pool day!!

Betsy - try this rub next time on just a regular pork roast and then use a sweet BBQ sauce on it after you shred it. I will list it as it the recipe was given to me - BUT personally, for us, it has too much salt so I cut the recommended amount of salt in 1/2 or add more of the other ingredients to make it not so salty. I got the recipe from some guy I used to work with who watches all of those cooking shows on TV. It makes a lot - I mix up a batch & just keep it in an old glass jar & use it as I need it. It keeps a long time and I use on a variety of meats (mostly ribs or pork roasts).

Dinosaur BBQ All-Purpose Red Rub

1/2 Cup Paprika
1/2 Cup Kosher Salt
1/2 Cup Light Brown Sugar
1/2 Cup Granulated Garlic
6 TBS Granulated Onion
1/4 Cup Chili Powder
1 TBS Black Pepper
1 TEAS Ground Cumin
1/2 TEAS Cayenne Pepper


This makes 2 3/4 cups as it's written. Just mix all the ingredients together in a bowl and store in glass or plastic container.

Looks like everyone is out having fun today. I'm just busy busy working! I cant believe the weekend is over. But that makes us 1 week closer to the trip! :woohoo:

Went to the pool for a few hours..we were ALONE!! I thought everyone would be there for the holiday...nope..just the D's!!

Then my dear DH let me take a 2 hr nap!!! Nice!! Then we went to see Disney's IRONMAN...Great Great GREAT movie!! Loved it!!

Came home and reheated the pork, beans, corn on the cob and the coleslaw I made yesterday...very good..I will make this pork again, I just learned that I don't like a spicy rub..so I think brown sugar, salt, pepper and cumin will be my next attempt! (I did change the basting to apple joice and brown sugar THAT was nice!)

ok..going to get my PJ's on!!

Yes..pool was GREAT!! we sat over in that same back corner...read, swam and sunned all alone..i could have stayed longer but it was so breezy, i figured I was going to burn and not realize it

Chocomole Recipe:

Note: This will make a huge bowl big enough for a family of four. You'll want to share this with friends.

  • Mash up 5 ripened avocados
  • Add 1 - 2 cups of chopped or blended dates
  • 1 soft cup of raw cacao
  • 1 easy cup of raw carob powder
  • 1 tbsp. vanilla
  • Add a few long pours of agave nectar to sweeten to liking
  • Then add half cups of cocoa and keep adding until chocolate taste is right. Careful not to overdo it -- if you add too much, it can get bitter.
 
I survived the weekend!!

In-laws flew from FL on Friday. They ate dinner at our house. They loved our newly renovated home. MIL was impressed with everything. This was was definitely so much nicer than the 2 BR moldy house we had to rent for 1.75 year from the sale of our big house.

Fri dinner went well.

Sat Graduation went well for DS17's Jesuit HS. I did not cry when DS17 walked across. Grad dinner was fantastic. All loved my chicken. Biggest shock to me was that In-Laws gave DS17 $$,$$$ to pay for his 2nd year at CalPoly (if he qualifies for in-state tuition) or 3rd year at RPI. I asked MIL why she was giving that much when I thought the DCL was the Grad gift. She said that the DCL trip was our family reunion together since DS17 future plans doesn't sound like that he will be taking trips with us anymore for awhile. MIL also added that since they never paid a dime for her son's (my DH) senior year at his Jesuit HS and none of his college expenses, this is their way to pay him back. :worship: :worship:

Sunday - I slept and stayed in bed reading books until we went to friends house for dinner and swimming.

Mon - I am sewing again but not curtains. From Sun's dinner, I found out that DS10's 4th grade class' oral book report will be presented in front of the PTA on Thursday night. It is sorta like a play in a wax figure museum. DS10 will be Stonewall Jackson. I was just going to have him wear a gray hat, white shirt, jeans, and shoes. But the other parents told me that this IS a big deal and they expect the kids to be costumed.

So I had to make a confederate general's uniform. I went to the thrift stores and found a boy's wool blue suit jacket and wool gray pants. I altered the suit jacket and added gold fancy topstitches. I altered the pants to fit DS10. I made a gold sash for his belt and I already had his gray hat. DS10 put the whole outfit on and showed DS17. DS17 thought DS10 was a Union general because of the blue jacket. I showed DS17 Stonewall's picture taken from his house and on battle. Jackson wore a blue jacket. DS10 started tearing off the blue jacket and told me that we had to reshop and I had to sew again another jacket but this time gray. DS10 is showing his tantrums and his ungratefulness so loudly that DH had to come in and calm down DS10.

DH looked at the pictures of Stonewall Jackson and tried to convinced DS10 that I did sew exactly like his pictures including the blue jacket. I did not have any gold buttons but now I have to sew gold buttons to exactly match the picture. (I'll never get to make the 2 FE at this rate!!!) I have to also make some kind of beard because Jackson had one. I also have to go to a store and get a sword, too. By now DS10 is happy again because I'm adding more to his costume. I thought I was DONE!! Of course, DH will be out of town this whole week so he has added more to my plate by this Thurs night presentation.

As we are leaving DS17's room, DS17 told DS10 that he does look like a Civil War general and because DS10 is wearing a gray hat and not a blue hat, people will know he is a confederate. This made DS10 very proud. I gave DS17 that mommy flabbergasted look: Why didn't you say he was a confederate in the first place. DS17 just said: What??? I didn't do anything!! My history books and civil war movies has Jackson wearing a gray jacket. I don't recall him wearing a blue jacket.

I'm off to bed thinking now how to make a mustache and beard. I guess I can have DS10 wear it also for the pirate party.

I hope everybody had a nice, safe, 3 day weekend. All this recipes and mention of food is making me gain weight before our cruise. - night
