Hey there!
This weekend I have a potluck to go to in the park, and I was wondering if any of you had any good recipes for cold cracker/chip dips? I was going to do something warm, but I won't have access to an oven, or an outlet for a crockpot.

Any help is greatly appreciated. Thanks!
 
My fave dip is a spinach dip that is served in a bread bowl. MMMM

KNORR SPINACH DIP

1 (10 oz.) pkg. frozen chopped spinach, thawed (do not use fresh)
1 1/2 c. sour cream
1 c. mayonnaise (I use Hellmann's)
1 (4 oz.) pkg. Knorr vegetable soup mix
1 (8 oz.) can water chestnuts, finely chopped
3 green onions, finely chopped
Round loaf of bread (I like rye)

Squeeze spinach until dry. In medium bowl, stir together spinach, sour cream and soup mix. Add finely chopped water chestnuts and green onions. Cover and refrigerate 2 hours or overnight. Cut slice from top of round loaf of bread, hollow out loaf to leave shell to contain dip. Use bread removed from shell and top slice to cut into bite size pieces. Butter inside of bread shell, fill loaf with dip and place on platter and surround with bread pieces and variety of raw vegetables

The other one I've done is a simple salsa/cheese dip.
It's a variation on taco dip that I devised because I didn't have taco mix. Now people ask for it. :confused3

Mix some salsa with a brick or two of cream cheese. Spread in the bottom of a glass pan. Top with more salsa. Top with shredded cheddar or mexican cheese blend. Get superfancy and put some chopped cilantro or green onions on top as a garnish. Takes about 5 minutes tops.

That's it. Serve with chips.
 
I make a chili con queso dip with one can of Rotel for every 1 lb of Velveeta (regular, not 2%). Just melt in the microwave and mix together. It's so incredibly simple, but everyone asks me for my "recipe." You can use whatever variety of Rotel you like (I use habenero when making it for my family), add some cilantro for garnish, whatever you like.

This is what I make, and it's very popular among my friends. I serve mine with Scoops corn chips because they tend not to break as easily as the tortilla chips we get here. If you have a good, strong tortilla brand then you can use that.
 
Pretzel Dip

Equal parts chip dip & Win Schulers cheese original or lite is what I use. Mix well put in fridg overnite. I serve with przetel chips or broken pretzel rods.

This is another onea friend of mine makes

•16oz softened cream cheese•2c finely shredded cheddar cheese•1 pkg dry ranch dressing mix •1/2c beer (plus or minus depending on the consistency you desire)

Method

Mix all ingredients, and allow to chill. Serve with small pretzels

I love this one-I serve it with the "Scoops" chips:

1 can black eyed peas
1 can black beans
1 can pinto beans
1 can shoepeg corn (white corn-but you can use yellow too)-drained
1 yellow, red or orange pepper (diced)--I usually use orange
1 can pimento, drained
1 bunch of green onions chopped
4 stalks of celery, diced
jalapeño pepper to taste (I use VERY little because I don't like them)

Mix everything above together in a large bowl

Mix dressing:

equal parts of vegetable oil, cider vinegar and sugar (I use 1/2 cup each)
pour over the above mixture

refrigerate a couple hours before serving.



I actually keep a bowl of this in the fridge most of the summer. It is a great VERY healthy snack that is filling for 3 teenagers :thumbsup2
 
My favorite (and am always asked to make it!) is Alton Brown's Cheese Dip - I think it's called formage dip or something on Food Network's Website.

This is not the exact recipe (I don't think), just from memory.

2 Tbsp. Butter at room temp
1/2 lb. cheese (sliced, grated, cubed...whatever is in the fridge) - I use Cheddar, Parmesan, and Fontanella. Make sure you cut up harder cheeses into small pieces.
1/4 cup of dry white wine
A few pieces of minced garlic - I have jarred minced garlic, so I add about 1/2 tsp.
Sometimes I sneak in some spinach leaves if I have any in the fridge. Shhh! no one knows!!! :lmao:

Put everything into a food processer and mix.

It is AMAZING! :worship: And SO easy to make.

This isn't really a chips/crackers dip because it is so dense. I use the thick preztels or carrots.
 
Hummus Greek Layer Dip:

Using a pie plate (I use a glass pyrex one) spread out two small containers of hummus. (We like all flavors but plain is fine). On top of the hummus add diced cucumber, tomatoe, feta cheese and black olives. Serve with pita chips, crackers or raw veggies. Yummy and pretty healthy if you go light on the feta.

This also travels well which is a plus. Enjoy!
 
DH likes Helluva Good Bacon and Horseradish dip, but the store was out of when he wanted it so I made this for him.


Zippy Horseradish Bacon Dip
3 tablespoons horseradish mustard (see below)
1/4 cup mayonnaise
1/2 cup sour cream
3-4 strips bacon, cooked crisp, drained, crumbled
reserve 1-2 tablespoons of bacon drippings

Horseradish mustard: combine 3 parts prepared horseradish and 1 part Dijon mustard, or buy a bottle of prepared(like French's). Use less horseradish if your shy about the intensity....2 tablespoons of horseradish to 1 tablespoon mustard to start, adding more horseradish if desired.

Dip: Mix all ingredients in a small bowl, including the drippings. Add horseradish-mustard 1 tablespoon at a time, until desired "heat" is achieved. (I used a 1/4 cup, but DH likes horseradish).

Serve with crackers or pretzels.
 
Not quite what you are asking for, but easy and yummy.

One brick softened cream cheese and one jar of marshmallow fluff. Combine using your handheld mixer. Serve with cut up fruit.
 
Tastefully Simple has some fantastic dip mixes.


A friend just brought in some Irresistable Italian dip. It was SO GOOD!!!

This is what we call "Redneck Caviar"!!! :banana:
 
Taco Dip

1 8 oz block of cream cheese
1 jar of salsa (you choose the heat level)
1 packet of taco seasoning
1 bag of finely shredded taco cheese

Mix it all together with an electric mixer. Chill. Serve with tortilla chips.

Also you can use this as a dip base for a "layer" dip. Omit the cheese.

Layer

refried beans
dip
guacamole
sour cream
salsa
shredded cheese

This is the one I was going to suggest. Although, I do it a bit different. I found the cucumber would make the dip a bit watery so I use green peppers instead. I also leave out the black olives because I am selfish and don't like them.

We make our own hummus instead of the store brand. I will dig up the recipe and post it.

1 can chick peas
Lemon juice (to taste)
Garlic (to taste)
1 ½ T. Tahini
2T evoo
Salt& pepper to taste

Blend in food processor
 
My newest most popular at Bunco and family parties, an adaptation of an Allrecipes recipe....

Spinach Artichoke Feta Dip

1 (8 oz) package cream cheese
1 (10oz) package frozen chopped spinach, thawed and drained
4 oz feta cheese
1 can artichoke hearts, chopped with hard leaf tips removed
2 tsp minced garlic
1/2 packet Ranch dressing mix
1/2 cup mayo
1/2 cup sour cream

Mix all ingredients and refrigerate. Best if made ahead, and sits out at room temp a while before serving. Serve with sturdy crackers.
 
Fast and easy.

****FIRE CRACKERS****

4 sleeves Premium Saltines
1-1/4 cups canola oil
2 Tbsp. Crushed Red Pepper (Pizza Pepper)
1 pkg. Dry Ranch Salad Dressing Mix

Stand all crackers on their edges (like papers in a file) in a a cake tin or rectangular plastic food storage container with a lid.

Mix all remaining ingredients in a small bowl to become a dressing.

Pour this mixture over the crackers. Let the dressing drain down and let set for 15 minutes. Then flip the container upside down . Let sit for 15 more minutes. Repeat this cycle 2 more times.

Remove crackers from any remaining liquid and store in an air-tight container. Serve with whipped cream cheese as the dip-the crackers are peppery and the dip is cool-delicious!!!
