Dinner reservations less than a day in advance?

We'll be at the GVC for 6 nights during the second week of Sept. But we won't know exactly when we'll be in the parks or doing other touristy things. In general, what are the chances of booking lunch or dinner reservations at places like Blue Bayou, Goofys Kitchen, or Storytellers within a 24 hour window? Thanks for any insight.
 
If your park days sts weekdays, you probably won't have an issue.

Second week of Sept. shouldn't be bad. I went during peak summer in August and was able to get Surf's Up reservations the night before. I've been able to get Cafe Orleans as late as two hours before I wanted during Easter week. Blue Bayou you should even still be okay, but you might not be able to get your absolute preferred time. BB is the one that I usually recommend making reservations for early if you know exactly what time you want to be there, but the other restaurants are far less competitive.
