Easy, peasy, please. You know, smells good, taste great, looks like you slaved all day kinda recipe.
I have 2 really good chicken recipes that I use... One takes a bit longer than the other, but its so worth it

Artichoke Chicken:
Pound chicken breasts until about half of their original thickness (1 per person) place in a baking dish in a single layer. In a bowl, mix 2 cans of drained artichoke hearts, 1/3 cup mayo, 1/4 cup sour cream, fresh Parmesan cheese, salt, pepper and garlic. Mix it well, then spread over top of the chicken. Cover with foil, bake @ 350 until chicken is cooked through. Uncover, sprinkle a little more Parm and put back in the oven til cheese has melted. This is great with crusty bread. I don't really measure when I cook... so the measurements aren't exact, you can add more or less of something to your taste.
Spinach Chicken
Thaw 2 of the small boxes of frozen chopped spinach. Squeeze dry. Set aside. Pound chicken breasts (same as above) set aside. Cook bacon (12 pieces--if doing 8 pieces of chicken) and set aside. You want the bacon to be cooked through, but not super crispy. In a bowl, mix 1 block of softened cream cheese, 1/2 c mayo, 1/2 c sour cream, the spinach, 1 c cheese (I use either white cheddar or Parmesan) salt, pepper and garlic. Crumble 4 strips of the bacon and mix it in. Spoon some of the mixture onto each piece of chicken, roll it up, wrap a piece of bacon around it. Set in a greased baking dish. Repeat. If there is any spinach mixture left, spoon over top of the chicken. Cover and bake, about 45 minutes @ 350. Remove cover, top with a little more cheese and bake til cheese has melted. This is soooo good... If I don't have bacon, I don't put it in. You can do it with light mayo/cream cheese, etc if you want. Again, measurements aren't exact - this is great with hot crusty bread... mmmm...
