dinner for one

dh has a night class three nights a week for the next six months. Sometimes I have college kids here but many times I don't. What do you eat when it's just you. I'm trying to not do cereal all of the time. With him gone this much most of the household chores are on my shoulders so I don't really want to make a big project or mess. I want something simple so I can get some of my own school work done while he's out.

I usually make a grilled cheese or an omelet. :)
 
I'm a golf widow and eat many evening meals alone. I get soups from the deli that are easy to heat. Sometimes I make a grilled cheese sandwich. A baked potato with salsa makes a good meal.
 
Well, when I saw your title cereal was the first thing that came to mind :lmao:. How about leftovers from a meal from the previous day? Sometimes I will make spaghetti with just sauce (no meat). I use Prego, warm that in the microwave while the noodles cook and eat.
 

I like the grilled cheese idea. I'm off dairy for another week at least though due to upper respiratory thing. I do like baked potatoes too.
 
When it's just me for dinner, I usually like to make:

Soup
Sandwich
Big Salad - I also sometime add chicken breast to it

ETA: also, if you pick up a pre-cooked rotiserrie chicken at the supermarket, or Costco, Sams, etc., you can make a few different meals with that too ...

Mac & Cheese

Well - it's always "just me" when I'm up here at the lake - except when my family comes on the weekends - but now they're gone for the season.. Took the travel trailer home Sunday..:(

So - since it's always "just me" - I tend to "batch cook".. Now keep in mind, because I'm so underweight, I don't have to be careful of what I eat.. The doctor wants me to eat everything and anything (meaning processed foods included) so we can at least get me back up to 96 lbs.. (I weigh 82 lbs. right now..)

I don't really like to "fuss" - just for myself - so this summer I tried out those Bob Evans mashed potatoes that you can get in the refrigerated section and was completely blown away when I found out that they are real potatoes and taste as close to my own mashed potatoes as anything I have ever had (even in restaurants).. My DD kept telling me they were, but I didn't believe her.. So the next time they went shopping for me I had them pick up 4 packages and I put them in the freezer..

Next - I had them get me the Tyson or Hormel meats in the microwaveable trays.. (Turkey breast and gravy; Beef tips and gravy; Maple Glazed Ham; Meatloaf and sauce; etc..) I'm pretty darn picky - and they're all really good!!

So - I'll make one of the mashed potatoes and one of the meats.. Get out 4 containers that can go in the microwave and make 4 "tv" dinners.. Sometimes I include the veggie - sometimes I do a fresh one.. When I do the turkey, I make Turkey Stove Top Stuffing and put that in with my "dinners" too..

On to the next meat - same scenario.. Sometimes I will also make my own spaghetti - or a big batch of my baked macaroni and cheese - and divide those into "tv" dinners..

Everything goes in the freezer and I either take one of them out in the morning to let it thaw in the fridge - or I cook it (extra time) in the microwave right out of the freezer..

So - I have a large variety of dinners already made - almost all of the time - and all I need to do is decide which one I want..:thumbsup2

It's really a life saver for me, because I have been suffering from severe fatigue lately and there are times that I would just as soon not eat as to have to "cook" something (from scratch).. But just being able to pop something in the microwave? I'm eating every night - and for me, that's VERY important..

Works for me.. Maybe you could do something on a smaller scale? Certainly would beat eating cereal all the time.. You'll have a nice hot meal..:goodvibes
 
Tonight I had a sandwich with turkey and tomato and some delicious seed bread and a tossed salad. I do enjoy preparing a larger meal some nights and then have leftovers, but every now and then it's nice to make a smaller meal.
 
When it's just me I usually have a can of spaghettio's or an egg and cheese sandwich
 
I like grilled (meatless) burgers on my little electric grill, grilled cheese, etc. I also have a bunch of individually portioned salmon that I will sometimes marinade and grill. A lot of nights I will just eat a big salad.
 
My BF just started working nights so I now "cook" for just myself during the week.

I have eaten many sandwiches, salads and soup. Tonight was....salad, lol! I will occasionally make a pot of white rice and add some frozen mixed vegetables. I can make that into several meals

I do cook for both of us on his nights off and will use the leftovers for during the week for me. I don't really like cooking for 2 but cooking for 1 really stinks. Its just not worth dirtying the pans for me.
 
I am the lone vegetarian in my family so I cook for just me a lot. I love wraps. I like to experiment with different cheeses, vegan or regular, and lots of veggies.
 
With winter around the corner, how about stocking up on soups that just you like? Or a nice hot roast beef sandwich?
 
When DH traveled for work for 2 1/2 months and came home on the weekends, well I still had to eat. Luckily he'll eat anything, so I would cook every other day or so and freeze the leftovers then when he left the house on Sunday he would load up the cooler and take them with him.

What will your DH be doing about eating? If nothing else you can cook and he'll be able to take leftovers to work for lunch the next day or even to eat for his own dinner before leaving for class.

When you do make dinner, freeze one portion. Then you can heat up a single serving on your nights alone. Other than that, they have really good sales on single serve entrees at the grocery pretty often, keep a bag of frozen veg and quick steam a portion in the microwave, easy dinner for one.
 
After three deployments-one after my kiddos left home-and now that hubby is home both of us occassionally travel for work anyway-so-two tactics-always have the makings for salads on hand-they can either be just veggies or have protien added-low fat cheese-canned tuna or left overs from another meal and when we are home on the weekends i cook big meals like i would have for the boys when they were at home and freeze the left overs in single servings-soups,pastas,meats, whatever. Then who ever is home alone can just pull something out and zap it-add a fresh veg or a salad and your good to go with very little work.
 
Here's my favorite recipe for one person (found on RecipeLink):

Yummy fish in orange sauce

All purpose flour
salt and freshly ground black pepper
8 oz fish fillet
1 T butter
1 t. orange juice
1 t. soy sauce

Season some flour with a little salt and freshly ground black pepper and coat the fish in the flour.

Melt the butter in a small frying pan and saute the fish for about five minutes turning occasionally.

Mix together the soy sauce and orange juice, pour over the fish, turn up the heat, and cook for about 1 minute, uncovered.

I use thawed tilapia fillets--for more servings, simply increase the quantities.
I also add some fresh basil ribbons at the end if I have it. Enjoy!!!
 
I like some of the Healthy Choice or Weight Watcher frozen dinners. Easy, and somewhat healthy.
