I am planning a trip that would include my uncle who is going to need a kidney transplant but we do not know when. If I make my group reservations for dining can I easily delete two people from the reservation if they can't come at the last minute?

Any changes in the reservation means a new reservation. I have always been able to make changes, but never made them at last minute. But you would definitely want to make the changes because otherwise you could be charged $10 per person because they didn't show for the reservation.

They only charge if the entire party is a no show or you cancel less than 24 hours prior to the reservation time. If a some of the dining party is unable to make it, they will not charge the no-show fee. This only applies to those restaurants that require a CC guarantee. If the location does not require a CC guarantee, there will not be a no-show/late cancel fee.

I would only worry about changing reservations that are for any locations that require pre-payment for the full amount.

If you were to show up with more people that might be a problem, but having less isn't a big problem. I did have to do this once where one of our family just wasn't hungry and didn't want to go. We showed up for our reservation and just told them we were one less and it wasn't a problem. I don't think two people not being there when you show up will be a big deal :).
