Dining Reservations during Covid

How far in advance must these be made? It is our first Universal trip and we just don't have any idea where we will be when. Is it possible to reserve places like Mythos and Lombards the day before? I'm seeing plenty of of options now for our trip the week of 3/27. How far in advance will those vanish? Thanks.

We were able to make reservations a few days in advance this week. Could modify most of them the day before or day of if needed.
