having been a server and a bartender for many years, I always tip 20 percent from the "getgo" unless the service is under par. therefore with the dining package, I usually add to the tip.. but I can see the server's dilema. i have waited on many people who RAVE about my service, swear they will always ask for me, and then leave me 10 percent, and think they are doing me a favor. however... i will still give them the BEST service.
I have ALMOST always had great sevice at disney restaurants. this last sept DH and I discovered that if you book a LATE reservation (i.e. after illuninations) the service is poor. I understand that it is late and the servers are tired; but if the restuarant is going to stay open for extra magic hours, we expect the same service as the people who eat at 8 pm, if not, then just don't stay open that late. we felt rushed at San Angel.. thought we would enjoy the ambience after illuminations,.. romantic setting, etc.. thought they were just going to bring out a bowl of cornflakes and milk to take care of the next am!(any "honeymooners "fans out there? ok, showing my age) on that occasion, I did not leave an extra tip. at Le Cellier, we have left MUCH more than the 18 percent (hey, the pkg. is free, our server is great, show him/her our apreciation for a job well done)
don't like to be rushed... tell them UPFRONT.. don't bring out my entree while I'm still working on my appetizer, with my salad still on the side. this is my suggestion if you book ADR for extra magic hours
