I have heard that the food on the children's menus is entirely different than the regular menus and not all that appetizing. Is this true or am I being told this by "picky eaters"?
It is quite limited from what it was, and leans more toward the healthy, which can be good, but I maintain is not appropriate for Disney to limit my choices as a parent to make me less able to give treats instead of fruit etc... To me it is their vacation, they should be able to have something good for dessert (and a variety, how many sundaes can a kid have for dessert if avoiding Apples etc...

We are a vegetarian family and I had my concerns for my 5yo Dnephew. He ate, well and plenty. The TS choices are good and we found enough variety at CS (breakfast, sharing adult meals, PB&J, etc.) that he liked it was a complete non issue. If we can make it work those who will eat a much broader menu should be just fine.
Don't rely on me, go look at the menus and decide for yourself how this could work for your family. Keep in mind at the resorts the grab and go sections will have even more options than what is listed on the restaurant menus.

Book BUFFETS- that way your kids can eat the same food as adults. Also, when picking out CS places, pick places that do not have a kids menu (there is a list on the thread that is sticky and says something like 'all you want to know about the 2008 DDP'.
If you do the above for most meals, your kids can eat the same food as the adults. In addition, some non buffet places have a few more normal options, like a childs steak. Check out the menus.

This is one reason we are doing a lot of buffets. I know my girls and they would be bored silly with the typical kids foods for multiple meals on multiple days. They love buffets in general and I think will especially love the Disney ones (me too, lol)

I agree! On our trips we always do a mix of buffet/ family style meals and regular TS. The problem really isn't the kids food, it was good quality, but the fact that so many of the TS places have the same menu for kids. With a little careful planning, kids can eat well at Disney.
Example: My seafood loving DS had shrimp at 'Ohana and Chef Mickey's, Mahi-Mahi, Mussels and Salmon at Crystal Palace and Salmon at GFC and at only 1 place (Sci-Fi) did he have to have an ice-cream sundae for dessert.
