Is there any overlap on the switch day?
For example, we will check out of hotel 1 at 7a, but will likely still have one TS and one QS credit left that we'll want to use. And technically the credits should still be active until midnight that day.
Will we actually have the credits until midnight that day even if the hotel 2 credits are put on our account in the am that same day?

Hopefully that makes sense..

Yes, you can still use the credits from the first reservation even after checking in to the second. They still expire at midnight. They cannot be combined with credits from the second reservation, so you'll have to get separate checks. They will need to be used before you use any credits from the second reservation. Only in very rare cases is that a problem.

Awesome, thanks! So for breakfast in the morning on switch day, we can ask for two checks and use the last credit for one meal and a new credit for the other?

I believe you'll need to check in to the second reservation to have access to the next set of credits. I'm fuzzy on how that really works now with online check-in. But, yes, you should be able to simply request separate checks. Note that you can't split a two-credit (signature, CRT, etc) meal across two plans.
