Dining Help Please?

We are coming during free dining, this is only our second trip so I have just a couple questions. We are checking in early on a Monday and checking out on a Saturday. First question can we use our food credits we have left after checking out? Second if we can could we purchase tickets for 7 days instead of the 6 so we will have meal credits for that entire last day we are in Disney when we will technically be out if we use all during the week because we will not be leaving till roughly 5 or 6 that evening? I'm thinking it will be much cheaper to add on one day of tickets for $15 for meals then paying out of pocket. Another random question that I know doesn't belong in this thread but was wondering does anyone know if you can pay out of pocket for waterpark and how much it is, were not sure yet if we want to go or not.

The dining plan is based on nights at the resort, not # of days on your ticket, so to increase the meal plan, you would have to add a night. You do not need park tickets to use dining credits, only to access the restaurants that are in the park. You may use your credits at any time after you check in to midnight the night you check out.
