For the first time ever I'm considering getting an AP, but haven't done it yet. Our trip is in less that 180 days and we're already making dinng reservations, starting with Hoop Dee Doo. Can you get the AP discount after having already reserved a meal like this?

Yes. Last year we purchased our pass after we'd made and paid for Hoop Dee Do. We went to the ticket window when we got to Pioneer Hall, showed them our annual pass and a refund for the amount of discount was credited to our credit card. Check with Disney to ensure this is still still holds true. In the case of other restaurants not prepaid just let the server know when you are ordering and they will ensure the discount is applied to your bill.
