You don't need to make ADR's that far in advance for DLR restaurants. You can get reservations for most restaurants a week or two out. No need to get up at midnight or whatever like people do for WDW.
 
If you plan on going through the holidays, it will behoove you to get your reservations in quickly, especially if you have a set time frame in mind. Popular time frames with some restaurants during holidays like Christmas or NYE go early, even at DLR. You can easily change them or cancel them should your plans change as you go. If you do not have a set time then you probably will be OK waiting. I would recommend not waiting if you are looking for a holiday where the park is likely to be closed due to reaching capacity.
 

I don't know specifically when the system rolls, but it's sometime after midnight, but before 6:00 am. As others have said, you don't need to be online right at the 60-day mark when the ADR window opens, but if you have a specific place you want to eat and a specific time or are going at a super busy time, I would make ADRs sooner opposed to later. That being said, there are a fair number of ADRs still available for Christmas Day dinner and the day after Christmas dinner, which are both pretty busy days in the parks.
 
So we are going the week between Christmas and New Years so our 60 days out started a couple of days ago. Because it was my first try with ADR and I'm a little obsessive I tried at exactly 00:10 and they weren't up, tried again at 03:00 still nothing but by 05:00 I could make them. No problems until I got to New Years Eve and New Years Day. I started again at 00:10 - nothing and tried each hour until 04:30, at 04:30. I wanted to make reservation at 07:00 and that time was already taken, so somewhere between 03:00 and 04:30 someone snuck in. I think it must be around 4:00-5:00 when they are on line. I was able to make reservations just not for the time I wanted on 12/31/14 but by the end of that day most places were full.

Reviving this thread! We are going the week of Thanksgiving and I'm hoping to refine my plan to snag a few ADRs for that busy time. I know I want WOC dessert package and the Minnie breakfast at Plaza Inn. Anyone know the current time the 60 day window opens? Thanks!
 
Seems to be around 2-3am local time I think. I work overnights so I casually check when I have a few minutes and I believe I was able to make all my reservations by 4am. Just note that some of the special events might not load the first day if they haven't set the entertainment schedule yet.
