I just bought a device that allows you to down load around 8 to 10 thousand pictures on it. It is called the Image tank G2... I t does not have a viewer but it has a 20 Gig hard drive and cost about $250 at insidecomputer.com.
 
Here is another option to consider. It is a portable CD burner that accommodates most camera media memory types. If you use CD RW disks in it you can continue to re-burn from your memory stick(s) until the CD is full. Once the CD is full, break out a new CD and keep on burning till you run out of vacation time.

The cost of this is $170 then about $20 for CD RW's... For under $200 you are all set. When your media cards get full, burn them to CD, format the memory card(s) and start over. If you get the sticks full while on the ship, return to room and burn them to the CD. The only time I can see having a problem is if you are off the ship and you take more photos than your cards(s) can hold. A quick return to the ship for a transfer to CD and back to photo taking...

There are many options available, I personally will just use my memory sticks and have Shutters transfer them to CD when they fill up. At least this way I can ensure the photos are actually on the CD before I delete them from my stick(s)
