differences from 2014 till now.. what are the must see/do's?

Hey everyone, last time I was in Disney was Nov 2014 and I have been told a lot had changed. My kids were not too much into Epcot so I'm thinking of skipping it this trip. I've heard there is a lot new things to see and do at Animal Kingdom especially pertaining to Avatar. And I've also been told a lot of new things at Hollywood Studios (which was pretty much under construction when we were last there) pertaining to Star Wars. Which my kids are HUGE fans. So please let me know what your new fave's are and what we have to see and do on this trip? Also we did the princess dinner at Ashkurshur in Epcot last time but if we're skipping Epcot what is another fun princess themed dining experience other than Cinderella's Castle for my girls? Oh and is the Star Wars character dining as cool as it looks??? Because I'm seriously considering that. Thanks peeps!!
