I found the biggest value of the T over the V to be that it gave our family two extra quiet, private spaces to be together: the balcony and the living room. However, the bang-for-the-buck value of going from non-concierge to a V was much bigger for us since it gave us the option to sit together quietly in the lounge or on the sun deck (which we actually used a lot on the Fantasy). Since there is so much going in on the rest of the ship, the ability to retract to somewhere quiet was extremely valuable for us. For example, we quickly ended up skipping dessert in the MDRs and have it quietly in the concierge lounge instead. This is just my very personal opinion, but a lot of the extra money for a T goes into the initial "wow" moment and the pretty photos of the beautiful interior. If you need to spend a lot of time inside, or if you have family members with mobility issues, the extra space in a T can make a huge difference (it did for us because of those factors). But, for a young and healthy family, I'd say stick with a V if you have hesitations about the extra cost of a T.
