What is the difference between the head server, assistant server, and regular server? Do they all serve you?

Head Server oversees many serving teams and it the go-to person if you have any problems or special dietary needs.
Server is the one that takes your food order and serves your food.
Asst. Server takes care of drink orders, bring bread to the table and replacing silverware.

Head server: Has many tables, oversees between a third and a quarter of the dining room. They act as your go-between with the kitchen if you have any allergies.

Server: Does all the heavy lifting. Brings trays full of food in from the kitchen. Takes your order and notes all your modifications.

Assistant server: Bread, drinks, condiments, other requests.
