I just made all of my ADRs for 2 people. My 1 year old will also be there. I didn't even think to count him, he will be in a highchair and won't be ordering. Do I really need to change them all to 3 people.

Yes, I think you do. You will need a 4-seat table instead of a 2-seat table to accommodate the high chair. It's better to do it now, than to wait so someone else can take your 2-top table reservation. If you have some really hard to get reservations that you can't change I would just leave them alone and tell the CM at the podium that you have an infant with you. You may have to wait longer for a table of the right size v/s the one you reserved.

While you probably will have to list your 1 yr old for capacity reasons like a PP said, I never did with my daughter when she was a baby. I didn't think to and no one ever said anything to me about there being a problem when I checked in. I didn't know any better but we were always seated on time without a problem.
 

We listed DD on our reservations in January when she was 12mo. However, as soon as they found out that one of our 3 was a highchair, we were seated at 2 top tables on a number of occasions. A small table with a high chair is NOT fun. I would definitely see if you can have a third person added to your reservations.
