I fell asleep 10 minutes before it ended so I don't know exactly what happened.

All the whodunnits And what was the deal with the Mercury? And what happened with the jewelery store? Did stones get replaced?

The jewelry store was pretty straight forward.
The replaced stone was a separate incident. The wife had done that a while ago and Nick just caught her.
He told her that she better find a way to NOT file an insurance report or he would make sure all her other jewelry was examined

The mercury......turns out the other fighter was the one that committed the murder. He knew he was going to lose the fight and didn't want to face the humiliation ....again!
He "injected" mercury into his gloves.
Made them very heavy (and lethal) and that's why his shoulder drooped (heavy glove).
Whenever he punched some of the mercury leaked out....that's why it was everywhere.
He switched gloves later......and no one actually saw him put the gloves on that were supposedly signed-off.

The gang shooting incident. The gang member that they were looking for (Tiny Tim) was found dead. The gun that he had used to kill the rival gang member was on the ground next to him. Seems like "The Man" got away without being charged.
