Does anyone have any favorite Diabetic recipes, cookbooks or websites??

DH was just diagnosed with type 2 and I was hoping to get some recipes. I also REALLY need is a good apple pie recipe...DH loves apple pie and I would like to make a special one for him that he can eat.

Any help would be great!! Thanks!
 
My dh has type 2 also. We really don't do special recipes. His doctor told him to follow the South Beach Diet, phase 2 and cut back on carbs (pasta, potatoes, rice, bread). That's been the hardest part for him as those are his favorite foods. I have several desert recipes that he likes that are sugar-free using jello & sugar free cool-whip. There are some websites that have recipes and info for diabetics. DH does most of the research, and most of the cooking in our house so I'm not too sure what's on the sites he uses.

My favorite dessert is a sugar free truffel.
I use two packages of SF chocolate fudge Jello brand pudding
SF Cool Whip
SF chocolate candies chopped up
SF cookies crushed - save one for the top
SF pound cake or Angel food - our local grocery store has either one but not usually both so i make it with which ever they have (I prefer Angel food)

I use a truffle bowl

Just layer everything
pudding, coolwhip, candies, cake, cookies, repeat till reach the top. The top layer should be coolwhip.

There are many variations to this. Make it without the candies or without the cookies. Can change up the pudding flavor as well

Its a crowd favorite - those with diabetes and those without.

I just loaned out my diabetic cookbook. It's a monster book. As soon as I get it back I will forward you any/all apple pie recipes. My favorite out of the book is Meringue Cookies. It is egg whites, cream of tater and an package of SF jello. I don't have the measurements but will update when I get the book back.

Good luck with the diagnosis and diet. I know it was DH's diagnosis, but you'll play a role in the changes as well. I am hypoglycemic and it took me a while to get used to the dietary changes. But once I did I felt so much better.

I REALLY enjoy the "Calorie Control Whipped Topping Mix". I used to buy Cool Whip, but the sugar-free has fat, while the fat-free version has sugar.

The calorie control whipped topping is creamier than Cool Whip, fat-free, sugar-free, and very easy to make. Note: if you make the topping with water it is 8 calories per serving (two tablespoons; note that Cool Whip is usually 20-25 calories per two tablespoons). However, I use fat-free milk, which ups the calories to 12 per serving. I keep a big tub in the refrigerator at all times (I recently bought a case of the stuff). My wife loves it also, and has started making some Dr. Pepper floats using it.

The Bernard cake mix and cake frostings are also very good. I actually found the chocolate cake mix a bit bland, so in my cakes I use the Bernard Brownie Mix: makes a nice two layer cake (using 8 inch round pans). The frostings are all great. Again: all low calorie, mostly fat-free, no sugar, etc.

One note about edietshop: my last order I waited patiently for 8 or 9 days for my order to arrive; nothing. I then emailed them one morning. That afternoon I received an email: they had lost my order! I was told they were putting my order in the mail. Sure enough, I got it the very next day: they mailed it using an 'overnight' mail service, which must have been hideously expensive since I ordered a case of the whipped topping mix. Good service (my previous orders all went fine, and I usually got the items in 5 business days).

Here in Fort Worth (if you are in this area) you can purchase most of the foregoing items at Diabetic Design, on Beach Street about 2 miles north of 820. Great people!

This monster cookbook you have...what is the name of it? I am actually researching book so to get a good one. Do you like it?? Would you recommend it?
